red beet hummus

Quick and easy recipe! 

Ingredients

  • 1 cup cooked chickpeas

  • 1 large red beet (cooked)

  • 1 small bell pepper (yellow, orange or red)

  • 1 clove of garlic

  • 1 tsp. lemon or lime juice

  • 1/2 inch piece of ginger

  • 1 tsp. sea salt

  • 1/4 tsp. ground black pepper

  • 1/8 - 1/4 cup water 

Method
1. Cut the red beet into medium cubes and roughly chop the garlic, bell pepper and ginger .

2. Combine all the ingredients in a food processor and process until very smooth.
