homemade soy milk
I've always been making different kinds of plant-based milks at home such as with almonds, oats or seeds, but I'd never made my own soy milk. For some reason I thought it was going to be more complicated since it involves cooking the milk! Recently I finally tried it and I wish I had started making my own sooner! It's just as simple as making nut-based milks and it tastes so much better than store-bought soy milk!
Ingredients:
(Makes about 3L)
250g organic soy beans
3L water
cheese cloth, milk bag or fine mesh dish cloth
Method
1. Soak the soy beans in water over night (about 8 hours).
2. Strain and thoroughly wash the beans, then combine the water and beans in a blender and blend until well combined.
3. Strain the "bean water" using the cheese cloth, milk bag or dish cloth.
4. Place the strained milk in a pot and bring to a boil. Let simmer for about 20 minutes, while constantly stirring.
5. If you have heat-proof glass jars, you can immediately pour the heated soy milk into them and seal it, otherwise wait for it to cool, then pour into storage jars.
This homemade soy milk froths just as well as the ones you can buy in stores! To store, keep in the fridge for up to around 4-5 days.
