jackfruit tortilla bowl

I like making bowls, because you get lots of little servings, kind of like your very own tapas. You can make smaller servings of different dishes to fill your plate and you get to experience different flavors. This bowl has only 3 components and will take you less than 45 minutes to make!

Ingredients
(Serves 2)

For Pulled Jackfruit:

  • 8oz jackfruit

  • 1/2 of a small onion (diced)

  • 1 clove of garlic, minced

  • 4 tbsp. unsweetened apple sauce

  • 3 tsp. tamari

  • dash of sea salt

  • 1 tsp. olive oil

  • optional: cayenne if you like spicy

Tzatziki:

  • 1/2 cup vegan yoghurt (I used cashew)

  • 1/2 of a cucumber

  • 1 clove of garlic, minced (optional)

  • 1 tsp. fresh lemon juice

  • dash of sea salt

  • fresh pepper

Fresh greens

2 tortilla wraps

Method

  1. In a medium pan, heat the olive oil, then add the diced onion. Sauté for about 5 minutes, then add the jackfruit and sauté for another 5 minutes.

  2. Add all the remaining ingredients for the pulled jackfruit and stir to combine everything. Turn the heat down to low and cover the pan. Simmer for 25 minutes, while stirring occasionally.

  3. For the tzatziki, cut the cucumber into 1/4 - 1/8 inch cubes, then combine all the remaining ingredients in a bowl and mix well.

  4. To serve, you can either wrap the greens, jackfruit and tzatziki in the burrito wraps, or plate them as shown in the picture.
